Ingredients
  

  • 2 lbs steak filet, ribeye, or sirloin, cut into 2-inch cubes
  • 4-5 tbsp avocado oil
  • 5 tbsp salted butter divided
  • 10 cloves garlic minced (divided)
  • 1.5 cups heavy cream
  • 2/3 cup parmesan cheese grated/shredded
  • 2 green onions sliced
  • 1 tsp red pepper flakes
  • 4 lbs russet potatoes optional
  • 1 cup half and half
  • 6 tbsp salted butter melted
  • 3/4 cup Monterey Jack or mozzarella cheese
  • 1 tsp garlic powder
  • 3/4 tsp salt
  • 1/2 tsp black pepper
Homemade Cajun Seasoning:
  • 2 tbsp smoked paprika
  • 1 tbsp cayenne
  • 1 tbsp onion powder
  • 2 tsp garlic powder
  • 1 tsp ground black pepper
  • 1 tsp salt
  • 1/2 tsp dried thyme
  • 1/2 tsp oregano

Equipment

Method
 

  1. Cut steak into cubes, rub with oil and Cajun seasoning. Rest at room temp.
  2. Prep and boil potatoes in salted water until fork tender.
  3. Sear steak in avocado oil for golden crust. Remove and set aside.
  4. Sauté garlic in butter. Return steak to coat in garlic butter. Remove.
  5. Make sauce: sauté garlic in butter, add cream, simmer. Stir in parmesan, flakes, onions.
  6. Mash potatoes with butter, cream, cheese, and seasonings.
  7. Plate steak bites over mash and drizzle with sauce.
