Ingredients
  

  • 1 lb boneless chicken breast or thigh cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Juice of 1/2 lime
  • Salt and pepper to taste
  • 1 bag 16–20 oz frozen crinkle-cut or waffle fries
  • 1 1/2 cups shredded cheddar or Mexican cheese blend
  • 1/2 cup pico de gallo or diced tomatoes
  • 1/4 cup pickled jalapeño slices
  • 1/4 cup chopped cilantro
  • 1/4 cup sour cream or Greek yogurt
  • 1/4 cup guacamole or avocado crema
  • 1 tbsp chopped green onions
  • Optional: 1/4 cup black beans or corn salsa for added fiber and texture

Method
 

  1. In a bowl, mix olive oil, cumin, chili powder, paprika, garlic powder, lime juice, salt, and pepper then coat chicken pieces in the marinade and refrigerate for at least 30 minutes
  2. Cook the chicken in a skillet over medium heat until browned and fully cooked, about 8–10 minutes
  3. Bake fries in the oven at 425°F for 25 minutes or air fry at 400°F for 15–18 minutes until golden and crispy
  4. Layer cooked fries on a baking tray, top with cooked chicken and shredded cheese
  5. Bake or broil for 5–7 minutes until the cheese is melted and bubbly
  6. Remove from oven and top with pico de gallo, jalapeños, cilantro, sour cream, and guacamole
  7. Serve immediately while hot and cheesy with your favorite dipping sauces
